Chocolate Chip Cookies - one bowl recipe
Preheat oven to 375
In a large mixing bowl, add:
- Add 3/4 cup granulated sugar
- Add 3/4 cup brown sugar
- Add 1 teaspoon vanilla extract
- Add 2 stick (1 cup) butter (soft, not melted). Mix until creamy.
- Add 2 eggs, one at a time. Beating well after each addition.
- Add 1 teaspoon baking soda
- Add 1 teaspoon salt
Add 2 1/4 cup flour slowly, mixing it in the whole time. Mix until the flour is completely mixed in.
- Add 12 ounces chocolate chips.
Oven should be at 375, bake for 10 min.
Gingerbread Men
The dough needs to set up for at least 2 hours, so plan ahead.
In a large mixing bowl, add:
- 1/2 cup unsalted butter (soft not melted)
- 1/2 cup granulated white sugar. Mix butter and sugar until creamy.
- 1 large egg
- 2/3 cup unsulphured molasses (To prevent molasses from sticking to the measuring cup, first spray the cup with a non stick vegetable spray.) Mix in until well combined.
- 3 cups all purpose flour. Add slowly, mixing until fully incorporated.
- 1/4 teaspoons salt
- 3/4 teaspoon baking soda
- 2 teaspoons ground ginger
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves. Mix until all spices are fully incorporated.
Dough must set up for at least 2 hours. Cover bowl with plastic and place in refrigerator.
Preheat oven to 350.
On a lightly floured surface, roll out dough to a thickness of 1/4 inch. Cut out cookies. Any left over dough can be used to make circular ginger cookies.
Bake for 8-12 minutes.
